A Spaghetti Sauce with All Good Things.. Don’t Tell the Kids!

1/2 an eggplant diced
1 garlic clove minced
1/3 of a med red onion diced
4 chicken thigh meat diced best you can..
olive oil
2 jars spaghetti sauce
2 bags of tjoes ziti noodles.
salt, pepper, turmeric, and cinnamon.

Put a large pan on the stove at low to medium heat and add a generous amount of olive oil to the pan. (* if you are dicing as you go , put the eggplant first, then the red onion, then garlic, then the chicken. )
Add the first 4 ingredients.
Generously add salt/pepper/turmeric/ and cinnamon to the pan as everything cooks.
Fill a pot with water and a pinch of salt and turn on medium to high heat to boil the ziti. When the pot has small bubbles, add the ziti and cook 12-15 min until ziti is soft.
While the water boils in the pot, return to the other pan and add 2 jars of spaghetti sauce. Stir until bubbles and then put at low to simmer while pot is boiling pasta.
When pasta is done, drain the water, then add the sauce to the pasta. Blend in well. Turn off heat on all burners. Let the food sit and mix. Serve 10-15 min later.
